Grilled Chicken and Veggie Sandwich
I found a recipe online a couple of weeks ago, tried it and liked it. Then I thought.....what if I added some things and changed up some things and the grilled chicken and veggie sandwich was born. It was soooooo good......I mean mouth watering, juicy good and I couldn't keep it to myself.
Grilled Chicken and Veggie Sandwich
6 slices of bread (Calabrese, French.....we used a whole grain, harvest loaf)
Cooked chicken breast - thinly sliced
Large portabello mushroom - thinly sliced
Zucchini thinly sliced
Red pepper cut into four equal pieces lengthwise
Yellow pepper cut into four equal pieces lengthwise
Mozzarella or havarti cheese
Margerine, butter or EEVO
Lightly butter one side of all pieces of bread (or brush with EEVO) then place butter side up on a cookie sheet and broil until golden. At the same time, grill mushroom, zucchini and peppers on BBQ or indoor grill until softened but not mushy. (You should be able to pierce it with a fork) Place three slices of your toasted bread, toasted side down, on the cookie sheet and layer with cheese, grilled veggies and chicken. Place back into the oven until cheese is melted. I spread flavoured mayo on the top slices of bread (recipe below) and pop in on top of the sandwich.
These sandwiches are addictive! Don't say that I didn't warn you. Enjoy!
Lemon Pepper Mayo
1/2 cup of mayonnaise
1/2 tsp. black pepper
1 tsp. lemon juice
You can adjust the amount of pepper to your liking.
