I usually stick to recipes, but every once in a while, I take bits from several recipes to make something all my own. Usually, cooking on the weekends is my husband's job, but he was grouting the bathroom tiles yesterday and it took longer than expected. I took a peek in the cupboards and fridge and decided to try making a tortellini soup. Guess what? I liked it!! A lot!!
Here's what I used:
1 package of cheese tortellini
1 can of diced tomatoes
1 cup of chicken broth (I will use three cups if I make it again, since we used up the liquid in two servings!)
A clove of garlic (diced)
Half and onion (I'm not a big onion fan...)
A couple tablespoons of oil (I used EVOO)
1/2 to 1 tsp each of basil and oregano
A pinch each of crushed red pepper flakes and black pepper
I started by putting the oil in the bottom of the pot and cooking the onion and garlic on medium heat. Then I just poured everything else in and cooked on high heat (stirring frequently) until the tortellini was all done.
